Riesling Qualitätswein
Analyse: Alc.: 11,73 %vol, Ac.: 7,2 g/l, RS.: 10,9 g/l Geschmack: The Dachsfilet is a Riesling with a pale yellow colour and light green reflexes. The smell emerges mature fruit notes from black currant, gooseberry and a little peach. The taste combines within a tight structure gentle spice and matured peach notes.

Grape production The Dachsberg has developed remarkably in recent years due to the climate changes that have taken place. Situated at 180 meters above sea level, the Dachsberg is the highest, steepest and, therefore, windiest site of the wine estate. The stony soils allow the vines to root deeply, giving a minerally, extract-rich character to the wines. The soils are deep with gravel and quartzite (sea sand and Taunus quartzite) and stony loess and loam. Until last year, only estate wines were produced from this site. However, in 2007, for the first time, grapes from the steepest part of the site were separately harvested and vinified. Wine production The wine harvest took place at the beginning of October. In order to receive a fresh fruit of the wine an intensive negatively selection was needed. The grapes were then carefully processed in the cellar of the estate. The fermentation first occurred on the mash, finally in cooled high-grade steel tanks. The year 2008 After a mild winter the bud-burst started end of April. May was relating to heat and sunshine duration comparable to June, which of course was activating the progression of the vines. It was a very short margin between the proliferation and the flowering, so that the canopy management was very demanding. The welcome precipitations in June were followed by a lot of rainfall in July and August. A cool and cloudy September restrained the ripening process. The grape harvest began end of October with a steady change of rainy days and calm autumnal weather. In order to that we needed courage to await and let the vintage endure despite the unsettled weather conditions. But in the end we were rewarded with high-class wines, fine-linked, vivid with a fresh acidity, a pleasant fruitiness and characteristic flavours. | |
